4 large potatoes
1 teaspoon fine sea salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon basil
½ teaspoon cayenne pepper
2 tablespoons olive oil
1 egg white


1.Preheat the oven to 450 degrees F.
2.Cut the potatoes into matchsticks.
3.Combine all spices, olive oil and egg white in a small bowl. Toss the potatoes with the spice mixture.
4.Line a baking sheet with a parchment paper. Spread the potatoes in a single layer.
5.Bake until your fries are golden and crisp, about 30 to 35 minutes. Serve warm.
