You need:

  • 120 ml vegetable oil
  • 3 medium floury potatoes - approx. 700g or 1.5 lbs- such as Maris Piper - peeled and chopped into 1-inch chunks
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 fat clove of garlic - peeled and minced

Preparation:

  1. I've got three floury potatoes, I'm going to peel and chop into one-inch or about two-and-a-half-centimeter chunks.
  2. Place the chopped potatoes in a pan of cold water bring it to a boil and then simmer for five minutes.
  3. Turn off the heat and drain off the water.
  4. Carefully give them a shake to fluff up the potatoes slightly.
  5. To saute something basically means to cook it quickly in a pan with a little bit of fat, so we're going to take 120 ml or half a cup of vegetable oil and heat it over high heat in a large frying pan.
  6. Place the potatoes in the pan and cook on high turning often until very lightly browned, this should take about five minutes.
  7. Then we're going to sprinkle on a good pinch, about half a teaspoon each of salt and pepper, and cook again turning often for a further five minutes until golden brown.
  8. Turn off the heat and allow it to cool for 30 seconds then add the garlic to the pan. Give it a good stir to infuse the garlic flavor in the potatoes, and then we're ready to serve.
  9. And there you go they're my simple crispy fluffy sauteed potatoes.

  • 1 teaspoon
  • vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, chopped
  • 3/4 cup quinoa
  • 1 1/2 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/4 teaspoon
  • Cayenne pepper salt and ground
  • black pepper
  • 1 cup frozen
  • Corn kernels
  • 2 (15-ounce) cans of black beans, rinsed and drained
  • 1/2 cup chopped fresh cilantro

Preparation:

  1. Heat oil in a saucepan over medium heat; cook and stir onion and garlic until lightly browned about 10 minutes.
  2. Mix quinoa into an onion mixture and cover with vegetable broth; season with cumin, cayenne pepper, salt, and pepper.
  3. Bring the mixture to a boil. Cover, reduce heat, and simmer until quinoa is tender and broth are absorbed, about 20 minutes.
  4. Stir frozen corn into the saucepan, and continue to simmer until heated through about 5 minutes.
  5. Mix in the black beans and cilantro.
